AYA fully embraces biodynamic principles and is cultivating biodiversity in its vineyards - ladybugs, worms, flowers, bees, cover crops, weeds - all part of a living, balanced system. They explicitly state they follow “entirely organic and biodynamic principles”
With vineyards in two regions - Kavarna (Black Sea) and Harsovo (Melnik) - AYAs grow a wide variety of grapes (Chardonnay, Pinot Noir, Melnik, Sangiovese, etc.). Manual work ensures low yields and quality. In Harsovo, they use gravity-fed processes and selective hand-harvesting. The “winery gallery” structure integrates these eco-friendly practices with aesthetic design.
